Carrot Cake.

Well we tried the Greek coconut cake and having got it right it is now on the menu.

For anyone who loves coconut this cake is just the thing. It is a dense syrupy cake with a baked on topping. It’s very hearty just like our carrot cake. Just the right cake for a cold winter’s afternoon tea.

The process of developing a cake such as this means we usually bake it at least five or six times before we are satisfied with the shape the height and the moisture level in the cake. All of our cakes are made to last three days after they leave our store so the cake needs to fairly moist on baking.

I will post a photo on my next blog, in the meantime come in and try it.

The carrot cake has been around for 14 years and is still going strong. Its baked with pineapple and is so full of flavour and moist. Its topped with lashings of lemon cream cheese icing which is whipped to a perfect white. I am not sure how the chefs do this but it really looks great.

Singing in the rain...


It’s raining again today so this is a good time to try out new cakes for the shop.


Product development is very important to any business and with food it can be fun.

Think of all that tasting we have to do. It’s a hard job but someone has to do it!


Today we are trying Greek Coconut Cake.


This is a dense moist cake with a baked on topping.

The cake has to taste wonderful but it has to look good too. Before we put anything on our menu we would make it an average of 10 to 12 times – refining all the details until we are satisfied that it’s spectacular. This can be quite difficult in a busy kitchen such as our Mt Eden kitchen but for our Head Chef this is exciting as it’s the creative side of her profession.

Lots of people ask us where our recipes come from. The answer to that is that they are mostly an amalgam of ideas both from our own lives and sometimes as far back as our grandparents.

The raw idea goes to the professional chefs in the kitchen who convert it into a modern day version of something great. In the next blog I will go through the process with one of more popular products. Watch this space……..

Winter delights.

All of a sudden it really feels like winter- the time for the great warming comfort foods.

We have just put on the menu sticky date pudding with caramel sauce.
Try that by the fire!
My personal favourite is raspberry and almond tart. This is the perfect mix – raspberries and almond frangipane. Just warm it and serve with crème fraiche or vanilla bean ice cream.
If you want a cake to celebrate how about Chocolate with Belgian chocolate frosting or Lemon Syrup. Our current best seller other than Chocolate (if in doubt choose chocolate) is Banana with caramel frosting. The smell of caramel cooking is wonderful. This week we are sampling this cake so come in and see what you think?
